
Amaranth is a plant native to the Americas, Asia, parts of Europe, and places in Africa, too, grown for her incredibly nutritious grain and leaves. You'll often find these beautiful leaves in our Braising Mix, adding wonderful color, flavor, and nutrition.
We love this plant here on the farm, for a multitude of reasons--her tasty leaves, the wonderful addition to our flower bouquets, and the high protein grain. She also tends to be a generous self-seeder, and we rarely have to replant in an area after we've done it once.
If the demand goes up, we're considering offering amaranth bunches for sale. They're incredibly high in those anthocyanins I mentioned on the Purple Beans page. They're also wonderful as a steaming green, and keep their powerful color. We've used them here to color homemade pasta--we just folded them into the sheets and ran them through the rollers until the leaf matter was incorporated--beautiful purple streaked noodles! Eat more colors!
