Lemon Cucumbers

Another one of those strange shaped cucumbers! Lemon cukes are called such simply because of their cute, little, yellow appearance. Lemon cucumbers, to my knowledge don't have a lemon flavor at all, though last year at farmers' market a little girl insisted the cucumber tasted like lemons. Perhaps the power of suggestion?

Lemon cukes are a great snack! Being about apple sized they fit in the lunch box nicely, or in the pocket on a hike. They're cute, convenient, and fun to munch on. They chop up easy for a salad, and make perfect mini spear pickles that really keep their crunch!
