When we first started raising pigs I thought, sure, home grown anything is better than store-bought, but bacon is bacon right? No. Nope. This bacon is sublime. It is so far beyond my expectations that we're extremely reluctant to sell any of it. However, we love you all, so we've made it available.
Our pigs spend 100% of their time on pasture, rooting in the earth as a crucial aspect our yearly garden rotations, and eating up organically-raised veggie scraps from our CSA and market harvests. They're also offered a soy-free, transitional-organic grain ration that most days we mix into a porridge with our goat whey and milk from our beautiful dairy goats, and are kept well stocked in mud puddles during the summer's heat.
All our pork products are made without nitrates or nitrites and are frozen instead of cured.
