1.5 lbs of bacon ends! This is what's left over after the thin bacon slices are made, the odd shapes and such. Nice thick pieces are an incredible addition to beans, soups, and greens. I find these a just a bit saltier than our usual bacon.
Our pigs spend 100% of their time on pasture, rooting in the earth as a crucial aspect our yearly garden rotations, and eating up organically-raised veggie scraps from our CSA and market harvests. They're also offered a soy-free, transitional-organic grain ration that most days we mix into a porridge with our goat whey and milk from our beautiful dairy goats, and are kept well stocked in mud puddles during the summer's heat.
